Turkey Kielbasa With Onions, Peppers & Sauerkraut

This is a quick and easy one but very tasty:

1 turkey kielbasa (no hormones/antibiotics or any crap)

1 chopped onion

1 chopped red pepper

1 chopped yellow pepper

1 chopped green pepper

1/2 cup of sauerkraut (I prefer high quality organic stuff but that’s just a preference any will do)

Garlic and Basil based on your tastes

1/4 cup of chicken broth

Pour the chicken broth into a pan and put the chopped kielbasa in, letting it brown. After it browns add in the peppers, onions, basil and garlic, cook until peppers are tender but still crisp. Once that is cooked up add in the mostly drained sauerkraut which you will only need to really warm. Serve over spinach or mixed greens to add some more nutrition.  Enjoy!

Roasted Turkey Tenderloins w/ Brussel Sprouts AND Bacon!

Okay got a little crazy today. This recipe was inspired by my love of turkey, brussel sprouts and, well yeah, bacon. Away we go:

 

Take a turkey tenderloin (usually split into two already and usually about one and a half pounds and split the two pieces  down the middle and put them to the side. Cut some brussel sprouts in half and layer them in the bottom of a roasting pan then pour about a 1/4 cup of chicken stock over them, salt and pepper them then put the turkey tenderloins over them. Spritz everything with (I use The Olive Scene) Butter (not really butter) olive oil, garlic infused olive oil and salt/pepper. I then stuffed with them some gorgonzola  cheese (yeah I’m not perfectly paleo yet, I still have the occasional cheese so sue me :-)), toss some bacon over the brussel sprouts and turkey, cover and bake on 400 for about 30 minutes. Uncover and bake for about another 10/15 minutes, let it all rest for about 10 minutes, serve and enjoy.

Roasted Turkey & Asparagus

Get yourself a turkey breast, preferably free range, no antibiotics or any of that. Coat a roasting pan with Olivio and chop off some asparagus spears and line the pan with them. Put the turkey breast on top of the spears, season with thyme and basil. Pour about 1/2 cup of water with two chicken bouillon cube and bake at 325 until the breast reaches about 155 or so. Best asparagus I’ve ever made.
