I am incapable of making pretty eggs but this might be the ugliest. It was tasty though. In a non-stick skillet cook down peppers(red, yellow,green, jalapeno), onions, garlic and bacon (I usually just separate the meat from fat and use that). In a bowl take two eggs and beat them and when mixture in skillet is done pour eggs over it. Once eggs are set flip them over, cook until done. Top with Mexican cheese blend and guacamole. You could top with salsa too but I was too lazy to make it. If you can make this prettier please send me pics and how you did it. I would love to be able to make pretty eggs. 🙂

Cheesy Chicken Taco Sloppy Joes (No bun)
June 4, 2012I LOVE Mexican food so I came up with this which is really just a modified taco meat recipe with no shell or tortilla. Hope you enjoy.
Slice garlic
ghost pepper “good fellas” style
Cube a tomato
Brown ground chicken then add about 1/2 cup of chicken broth and chili powder and crushed cayenne pepper to the pan, let simmer a couple minutes add in tomato and sliced garlic and pepper, mix in fresh cilantro if you like it. Let it cook about 5 minutes or so. Top with cheddar cheese slice.
You can remove the cayenne and ghost pepper if you don’t like your face blown off. 🙂
