Baked Chicken Breast w/ Goat Cheese, Brussel Sprouts, Cabbage & @JulianBakery Paleo Powder

This is just a variation of my various roast chicken recipes but the addition of the paleo powder over basic salt, pepper, etc was a great idea. Seriously, even if you’re not on anything resembling a paleo diet, get the stuff, its awesome.

 

Line a pan with some halved brussel sprouts and cabbage leaves, coat them with olive oil, salt, pepper and a small amount of Paleo Powder. Put some peppers, red onions and bacon over top the veggies. Split the chicken breasts down the middle (just a little slit) and put some goat cheese in the slit.  Place your chicken breasts on top, pour on some Paleo Powder to taste and top with bacon strips. Cover and bake on 400 for about 40 minutes (use a meat thermometer to be sure) and then enjoy.

Pork Tenderloin with Roasted Broccoli & Brussel Sprouts

Back to an old favorite roasted pork tenderloin.

Line the pan with broccoli and halved brussel sprouts (if they’re bigger ones) and pour some chicken broth over the veggies. Coat veggies in olive oil and then put the tenderloin over the veggies, pour a bit more olive oil on the meat and season with garlic, thyme, basil, salt and pepper.  Roast on 400 for about 45 minutes. It comes out juicy, tender and will be excellent tomorrow in my roasted pork and goat cheese omelet. 🙂

Wife Wanted Chicken Again…Weird (or Roast Chicken with Brussel Sprouts and Bacon)

So my wife loved the chicken I made last week except instead of cabbage I made it with brussel sprouts, bacon and onions tonight.  She’s sick so I made sure to include some broccoli too. 🙂  It was pretty good I have to say. so same recipe with the above changes and all you go. I’m also now all out of The Olive Scene Olive Oil and we’re in the middle of another snowstorm, oh well, its totally worth it. Pic below, enjoy.

Roasted Turkey Tenderloins w/ Brussel Sprouts AND Bacon!

Okay got a little crazy today. This recipe was inspired by my love of turkey, brussel sprouts and, well yeah, bacon. Away we go:

 

Take a turkey tenderloin (usually split into two already and usually about one and a half pounds and split the two pieces  down the middle and put them to the side. Cut some brussel sprouts in half and layer them in the bottom of a roasting pan then pour about a 1/4 cup of chicken stock over them, salt and pepper them then put the turkey tenderloins over them. Spritz everything with (I use The Olive Scene) Butter (not really butter) olive oil, garlic infused olive oil and salt/pepper. I then stuffed with them some gorgonzola  cheese (yeah I’m not perfectly paleo yet, I still have the occasional cheese so sue me :-)), toss some bacon over the brussel sprouts and turkey, cover and bake on 400 for about 30 minutes. Uncover and bake for about another 10/15 minutes, let it all rest for about 10 minutes, serve and enjoy.
