Chicken and Zucchini Noodles w/steamed veggies

I had to take a bit of a break from chicken because I eat a lot of it but I never get tired of chicken with some cheese. Yum! Anyway here it is:

Butterfly 2 seasoned (garlic, pepper, salt) chicken breasts and stuff them with cheese. Easy peasy!

Bake them on 400 for about 20 minutes give or take. Flip in the middle. When they’re about five minutes from done I sprinkle a little cheese on the top.

While those are cooking sauté diced onions, peppers and garlic until nearly caramelized and then add in the noodles. Cover and let simmer for about 20 minutes or so or until noodles are to your preferred consistency.

Um for the steamed veggies, you know, steam some veggies.

Really easy and quick dinner. My toddler ate all my carrots though. She didn’t want hers.

I just realized the picture is a little awful so ignore it. The chicken was not that “white” I don’t think the cheese photographed well.
