Taco Spinach Salad

Yum!

1/2 pound of ground beef (grass fed, no antibiotic/hormones, all that jazz)
1 Tablespoon of chili powder
1 Tablespoon of cumin
1 cup of spinach
1 cup of diced tomatoes
1/2 cup of diced onions
1/2 cup of diced peppers (tri-color)
1/2 Tablespoon of cilantro
1 Tablespoon of coconut oil
1 Tablespoon of Wholly Guacamole or make your own

A little cheese if you can handle it. I can handle a very little of it so I added some to mine.

Toss the peppers and onions into a skillet with melted coconut oil and wait until the onions start to brown a little. Add in the ground beef, mashing it up into little bit along the way. Add in your seasoning and mix it thoroughly. When the meat is browned, drain the skillet, add in the tomatoes and cilantro. Serve over the spinach and top with the guacamole and cheese (optional). Enjoy.

  1. So I mentioned to my friend at geek cooks that I would be veganizing w/o added oil his taco salad for my dinner tonight. And I did 🙂
    1 package of Steamed lentils or soy/vegetable crumbles (Yves/trader joes)
    1 Tbsp. taco seasoning
    1/4 cup diced onion
    1/2 cup multicolored bell peppers
    1Tbsp. minced garlic
    1Tbsp. cilantro.
    1/4 cup vegetable broth
    1/4 cup salsa
    1cup spinach
    1cup lettuce of your chooseing

    If you choose you may add Guac/Vegan Sour Cream/Vegan Cheese but that would add oil to your otherwise healthy dish.

    Start with the vegetable broth, cook the onions garlic and cilantro in it. Then add the bell peppers, cover and allow to simmer for a couple mins. then top with the salsa. Add the soy crumbles or trader joes steamed lentils to the mixture then add taco seasoning. Mix everything together in the skillet and let simmer for all the flavors. Now I did a blend of spinach and butter lettuce that I chopped and mixed together. I have learned if I eat chopped leafy greens I can get more in my system increasing my fullness while decreasing my caloric intake. Once the lettuce and spinach are ready top them with you taco mixture, tomatoes, and any other taco related toppings you like. Remember Guac has an oil content although its healthy its still oil and if you have had a heart attack stay away from oils.
