Chicken Sausage Scramble

Woke up hungry, which I guess is good considering all that’s going on right now. Here’s what I made:

Heat some olive oil in a skillet add in some cut up chicken sausage and brown it. Toss in some onions, red peppers, yellow peppers and green pepper and salt/pepper to taste, cook until sausage is done and onions are caramelized In a bowl, beat three eggs, add in a tablespoon of melted ghee. Remove sausage/pepper combo to a plate, pour egg mixture into pan and scramble eggs over medium heat until done. Season with salt, pepper and paleo powder, serve over sausage/pepper combo. Enjoy.

NoOodle — No Thank You

Readers of this blog will remember that I do not like “fake” food but my wife decided I deserved a treat so she wanted to make me one of my favorite old treats, spaghetti and meat sauce, which I really appreciated. She was perusing around the Internet and happened upon NoOodles. Now…she originally complained about the smell which I didn’t get to experience as I wasn’t home when she opened them but when we started eating them we began to see the real problem.

The real problem with this and most “fake” food is the same thing, texture, taste is a separate issue. We both have a real hard time getting past to texture though, these NoOodles had the same texture of “jellyfish tentacles” as my wife said. This was true, there was no denying it. The sauce made it edible but shortly after eating it, I cleaned up the kitchen and asked to never speak of this again.

I wish I could give it a better review or say anything positive at all but I guess that if you make something with 0 calories and 0 carbs and 0 everything then flavor and texture have to go too. Fake food loses again.


Variety And The Spice Of Life…or Coconut, Is There Anything You Can’t Do?

Since figuring out all these allergies I’ve been doing a lot of experiments with different types of cooking oils. My love of flavor infused olive oils is well documented in this blog but lately I’ve been making my morning breakfasts with coconut oil and I have to say, I like it. Sometimes using the flavored olive oils (even if it is just a little bit) leaves the eggs tasting a little “greasy” which I don’t like. The coconut oil seems to not do that even though I use the same amount. The only thing I dislike about it so far is that it seems to smoke a lot more/quicker than the olive oils do. I could just be doing something wrong with it but I generally cook on a pretty low heat because I hate burnt food. Anyway the amount of products and foods I’ve had to use coconut with is just amazing. I really had no idea it could do so much…coconut sugar for my tea, coconut “milk” creamer for my tea, coconut flour for pancakes and coconut oil for general cooking and baking, I’m pretty sure there is nothing coconut can’t do. I’m waiting for “research” to show that it causes copious amounts of cancer when eaten in large supplies.


Living On The Edge

I’ve been experimenting lately and eating out at restaurants more and cooking a bit less. This is really living on the edge for me given all the food allergies I have BUT I have found that most places are really nice and accommodating. I’ve only gotten sick a couple of times and only mildly. Eventually I’m going to write a post about how “gluten free” is very nearly meaningless to me and why it should make everyone take a second look. Not right now though, right now it is summer time and I’m getting ready to cook A LOT more because, well, I enjoy the grill. First up will be some scrumptious seafood (recipes to follow) and then some land dwellers, I have quite a few new things in mind.

That’s right, after this week, I’m putting the restaurants away for a while and getting back into my kitchen so more recipes and more, hopefully, yummy food.
