
Roasted Turkey Tenderloins w/ Brussel Sprouts AND Bacon!
January 16, 2013Okay got a little crazy today. This recipe was inspired by my love of turkey, brussel sprouts and, well yeah, bacon. Away we go:
Take a turkey tenderloin (usually split into two already and usually about one and a half pounds and split the two pieces down the middle and put them to the side. Cut some brussel sprouts in half and layer them in the bottom of a roasting pan then pour about a 1/4 cup of chicken stock over them, salt and pepper them then put the turkey tenderloins over them. Spritz everything with (I use The Olive Scene) Butter (not really butter) olive oil, garlic infused olive oil and salt/pepper. I then stuffed with them some gorgonzola cheese (yeah I’m not perfectly paleo yet, I still have the occasional cheese so sue me :-)), toss some bacon over the brussel sprouts and turkey, cover and bake on 400 for about 30 minutes. Uncover and bake for about another 10/15 minutes, let it all rest for about 10 minutes, serve and enjoy.
