
Sunday Morning Fritatta
July 15, 2012My favorite Sunday breakfast. Saute peppers (red, yellow, green), shitake mushrooms, garlic, onions and spinach together. In another pan, cook some Turkey sausage (I usually cut up links) until done. In a cast iron pan, fill halfway with eggbeaters (about two cups), add pepper, salt and chili powder. Add your mixture of meat and veggies from above and then beat two eggs together and pour over whole thing, top with a generous amount of low fat cheese. Bake at 350 until done, usually about 40 minutes. Will feed you for a couple of days.
