Adapted Chicken Jalisco

Take peppers (Red, yellow, green), onions, jalapeno and garlic and saute with a 1/2 teaspoon of butter substitute (olivio) until soft then add in diced tomatoes and cook until mixed well. In a baking pan add chicken breast and broth. Top with low fat Mexican cheese blend (cheddar, Monterey jack). Cover with mixture and cover with foil. Bake for about 30 minutes. Top with guacamole and enjoy. This is one of my favorites.
